In Aleph Winery we determine the optimal harvest time as analytical parameters and grape tasting.
Vintage is always manually in boxes of 12 kg. Our technical team performs a rigorous selection of grapes in a vineyard, choosing those with better health status.
After entering the grapes in the warehouse, we make a cold maceration for 2-3 days in cold storage between 0 and 4 degrees. Subsequently, we managed without crushing bunches. The fermentation is at controlled temperature. Our Aleph merlot-Petit Verdot makes malolactic in barrel, which refines its organoleptic characteristics.
The Aleph Winery have a park of more than 40 barrels, all French oak of the bests cooperages Seguin Moreau, Taransaud, Vicard, Nadalie … 18 are barrels of 225 litres, used for wine from Bordeaux. For special vinification we have 4 barrels of 500 litres and 22 barrels of 300 litres. Selection of the best barrels out our Aleph Merlot-Petit Verdot
